There is no way you can claim to have a working and functional kitchen if there is no clear cut waste disposal system in place. If you don't have it already, I'd suggest right away that you begin to work on remodeling that kitchen. Imagine; how in the world would you get rid of all the mess that the kitchen chews out? You could be heading for a major health hazard without doing this!

Your kitchen could use a craft center, you know that? A portion of the whole space in which you could retreat from basic kitchen activity to indulge in a hobby or two. The way to get it done is to bring together as many heads as you can, so that you can explore all the angles of the project and see how well and quickly you can complete it. There is hardly a better person to meet your kitchen remodeling needs than a contractor who knows what they are doing. But you'd better know what you are doing also, if you intend to like the kitchen that you are working on. It is a great idea to want to do it at this time, but there is little room for mistakes, and you will do well to remember that.
